Due to their extreme toughness, Atlantic oysters have a lengthy shelf life. When stored in the right conditions and kept in a refrigerator, they can often last two to three weeks. But to get the optimal flavour, the sooner you eat them, the better!

To store oysters, keep them in a refrigerator at 40°F (4°C) or below, ensuring they are in a moist environment but not submerged in water. Store them with the cupped side down and cover them with a damp cloth or paper towel.Avoid airtight containers, as oysters need to breathe.
How do I check the Quailty of the Oyster?

Before shucking your oysters, make sure the oysters are shut tight, and that there is not a hollow sound coming from the shell. If your oyster sounds hollow and feels lighter than usual, dispose it!
